- 0.75–1 lb chicken breasts, cubed
- 1 Tbsp corn starch
- ¼ tsp black pepper
- ¼ tsp salt
- ½ tsp red pepper (to taste)
- 1 small red bell pepper
- 1 small orange bell pepper
- 1 jalapeño, sliced
- 1 Tbsp olive oil
- 1 Tbsp butter
- 3 cloves garlic, minced
- 1 inch ginger, minced
- ¾ cup sweet chili sauce
- 1–2 Tbsp honey
- 1 lime, sliced
- 3 Tbsp green onions, chopped
Instructions
- Preheat oven to 375ºF.
- In a large bowl, mix the cubed chicken with corn starch, black pepper, salt, and red pepper until well-coated.
- Drizzle olive oil on a baking sheet and spread the chicken on one side; add sliced bell peppers and jalapeños around it.
- Bake for 20 minutes, flipping halfway through until chicken reaches an internal temperature of 165ºF.
- Meanwhile, prepare the sauce by melting butter in a saucepan and sautéing garlic and ginger before adding sweet chili sauce and honey.
- Once cooked, pour the sauce over the chicken and serve garnished with lime slices.
