Cookie Dough:
- 1 cup (2 sticks) unsalted butter, softened
- 1 cup granulated sugar
- ½ cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon strawberry extract
- 2 ½ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 (3.4 oz) box vanilla pudding mix
- ½ cup freeze-dried strawberries, crushed
- 1 cup white chocolate chips (optional)
Strawberry Crunch Topping:
- 1 cup Golden Oreos, crushed
- ½ cup freeze-dried strawberries, crushed
- 2 tablespoons unsalted butter, melted
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Cream butter, sugar, and brown sugar together until light and fluffy.
- Add eggs, vanilla extract, and strawberry extract. Mix until combined.
- In another bowl, whisk together flour, baking soda, salt, and vanilla pudding mix.
- Gradually add dry ingredients to wet ingredients. Mix until just combined.
- Fold in freeze-dried strawberries and white chocolate chips (if using).
- Roll dough into tablespoon-sized balls and place them 2 inches apart on a baking sheet.
- Bake for 10-12 minutes, or until the edges are golden brown.
- Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
- Make the crunch topping by combining crushed Golden Oreos, freeze-dried strawberries, and melted butter.
- Press warm cookies into the topping to coat them. Let cool completely before serving.

- Store cookies in an airtight container at room temperature for up to 5 days.
- To freeze, store in a ziplock bag for up to 3 months.
- Add a drizzle of white chocolate or cream cheese icing for extra flavor.
