Description

    • 1 (3.4 oz) box vanilla pudding mix
    • ½ cup freeze-dried strawberries, crushed
    • 1 cup white chocolate chips (optional)

    Strawberry Crunch Topping:

    • 1 cup Golden Oreos, crushed
    • ½ cup freeze-dried strawberries, crushed
    • 2 tablespoons unsalted butter, melted

Instructions

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • Cream butter, sugar, and brown sugar together until light and fluffy.
  • Add eggs, vanilla extract, and strawberry extract. Mix until combined.
  • In another bowl, whisk together flour, baking soda, salt, and vanilla pudding mix.
  • Gradually add dry ingredients to wet ingredients. Mix until just combined.
  • Fold in freeze-dried strawberries and white chocolate chips (if using).
  • Roll dough into tablespoon-sized balls and place them 2 inches apart on a baking sheet.
  • Bake for 10-12 minutes, or until the edges are golden brown.
  • Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
  • Make the crunch topping by combining crushed Golden Oreos, freeze-dried strawberries, and melted butter.
  • Press warm cookies into the topping to coat them. Let cool completely before serving.

  • Store cookies in an airtight container at room temperature for up to 5 days.
  • To freeze, store in a ziplock bag for up to 3 months.
