  • 3 large chicken breasts
  • 2 small heads broccoli, chopped
  • 1/2 cup soy sauce
  • 1/2 cup honey
  • 1/4 cup rice vinegar
  • 3 cloves garlic, minced
  • 2 tablespoons sriracha
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon oregano
  • 2 teaspoons sesame oil
  • 1 teaspoon ground ginger
  • 2 teaspoons arrowroot powder mixed with 2 tablespoons water (slurry; can substitute cornstarch)
  • 1/2 cup mayonnaise
  • 23 tablespoons water
  • Sesame seeds

Instructions

  1. Cook the rice according to package instructions; set aside.
  2. Steam the broccoli until fork-tender; set aside.
  3. Cut chicken into bite-sized pieces and toss with olive oil and spices.
  4. Air fry seasoned chicken at 400°F for about 12 minutes until cooked through.
  5. In a saucepan, combine soy sauce, honey, rice vinegar, garlic, sriracha, sesame oil, ginger; boil and thicken with arrowroot slurry.
  6. Mix mayonnaise with sriracha and water for spicy mayo.
  7. Assemble bowls with rice on the bottom, topped with broccoli and chicken, drizzled with sticky sauce and spicy mayo.
