- 2 cups fresh spinach, chopped (or 1 cup frozen, thawed & drained)
- 1 can (14 oz) artichoke hearts, drained & chopped
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 4 oz cream cheese, softened
- 1 cup heavy cream (or half-and-half)
- 1 cup milk
- 2 tbsp butter
- 3 cloves garlic, minced
- ½ tsp red pepper flakes (optional)
- ½ tsp nutmeg (optional)
- Salt & black pepper, to taste
Topping (Optional, but Recommended)
- ½ cup panko breadcrumbs
- ¼ cup Parmesan cheese
- 1 tbsp olive oil or melted butter

Instructions
Step 1: Cook the Pasta
- Bring a large pot of salted water to a rolling boil.
- Cook pasta until al dente, following package instructions.
- Drain and set aside.
Step 2: Sauté the Spinach & Artichokes
- In a large sauté pan over medium heat, melt butter.
- Add minced garlic and cook for 1 minute until fragrant.
- Stir in chopped artichokes and spinach, cooking until spinach is wilted.
- Season with salt, pepper, and red pepper flakes.
- Remove from heat and set aside.
Step 3: Make the Creamy Cheese Sauce
- In the same pan, add cream cheese and melt over low heat.
- Pour in milk and heavy cream, whisking until smooth.
- Stir in mozzarella and Parmesan, melting into a thick, creamy sauce.
- Add nutmeg and adjust seasoning.
Step 4: Combine Everything
- In a large mixing bowl, combine:
- Cooked pasta
- Spinach & artichoke mixture
- Creamy cheese sauce
- Stir until evenly coated.
Step 5: Assemble & Bake
- Preheat oven to 375°F (190°C).
- Transfer pasta mixture to a greased baking dish.
- Sprinkle with extra Parmesan and panko breadcrumbs (if using).
- Drizzle with olive oil or melted butter for a crispy top.
- Bake for 20-25 minutes, until golden and bubbling.
Step 6: Cool & Serve
- Remove from oven and let cool for 5 minutes before serving.
- Garnish with fresh parsley or extra Parmesan.
