  • 12 oz pasta (penne, rigatoni, or fusilli)
  • 2 cups fresh spinach, chopped (or 1 cup frozen, thawed & drained)
  • 1 can (14 oz) artichoke hearts, drained & chopped
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 4 oz cream cheese, softened
  • 1 cup heavy cream (or half-and-half)
  • 1 cup milk
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • ½ tsp red pepper flakes (optional)
  • ½ tsp nutmeg (optional)
  • Salt & black pepper, to taste

Topping (Optional, but Recommended)

  • ½ cup panko breadcrumbs
  • ¼ cup Parmesan cheese
  • 1 tbsp olive oil or melted butter

Optional Add-Ins:

  • Protein: Cooked chicken, shrimp, or sausage
  • Extra Veggies: Mushrooms, sun-dried tomatoes, bell peppers

Instructions

Step 1: Cook the Pasta

  1. Bring a large pot of salted water to a rolling boil.
  2. Cook pasta until al dente, following package instructions.
  3. Drain and set aside.

Step 2: Sauté the Spinach & Artichokes

  1. In a large sauté pan over medium heat, melt butter.
  2. Add minced garlic and cook for 1 minute until fragrant.
  3. Stir in chopped artichokes and spinach, cooking until spinach is wilted.
  4. Season with salt, pepper, and red pepper flakes.
  5. Remove from heat and set aside.

Step 3: Make the Creamy Cheese Sauce

  1. In the same pan, add cream cheese and melt over low heat.
  2. Pour in milk and heavy cream, whisking until smooth.
  3. Stir in mozzarella and Parmesan, melting into a thick, creamy sauce.
  4. Add nutmeg and adjust seasoning.

Step 4: Combine Everything

  1. In a large mixing bowl, combine:
    • Cooked pasta
    • Spinach & artichoke mixture
    • Creamy cheese sauce
  2. Stir until evenly coated.

Step 5: Assemble & Bake

  1. Preheat oven to 375°F (190°C).
  2. Transfer pasta mixture to a greased baking dish.
  3. Sprinkle with extra Parmesan and panko breadcrumbs (if using).
  4. Drizzle with olive oil or melted butter for a crispy top.
  5. Bake for 20-25 minutes, until golden and bubbling.

Step 6: Cool & Serve

  1. Remove from oven and let cool for 5 minutes before serving.
  2. Garnish with fresh parsley or extra Parmesan.
