  • Author: Georgiana
  • Total Time: 40 minutes
  • Yield: 9-12 blondies 1x
  • Diet: Vegetarian

Description

Chewy, buttery blondies infused with warm spices and a hint of dark rum for the perfect indulgent treat.

Ingredients

Scale

Dry Ingredients:

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground allspice
  • ¼ teaspoon ground cloves

Wet Ingredients:

  • ¾ cup unsalted butter, melted & spiced
  • 1 cup light brown sugar, packed
  • ¼ cup granulated sugar
  • 1 large egg + 1 egg yolk
  • 2 tablespoons dark rum (or rum extract)
  • 1 teaspoon vanilla extract

Optional Mix-Ins:

  • ½ cup white chocolate chips
  • ½ cup toasted pecans
  • ¼ cup dark chocolate chunks

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch or 9×9-inch square baking pan with parchment paper.
  2. Prepare Spiced Butter: Melt butter in a saucepan over medium heat. Stir in cinnamon, nutmeg, allspice, and cloves, cooking for 1 minute. Let cool for 5-10 minutes.
  3. Mix Wet Ingredients: Whisk brown sugar and granulated sugar with the spiced butter. Add eggs, vanilla, and rum, mixing until smooth.
  4. Combine Dry Ingredients: In a separate bowl, whisk flour, baking powder, and salt. Gradually fold into wet ingredients, stirring until just combined.
  5. Add Mix-Ins (Optional): Gently fold in white chocolate chips, pecans, or dark chocolate.
  6. Bake: Pour batter into the lined baking pan, spreading evenly. Bake for 25-30 minutes, or until the edges are golden and a toothpick inserted in the center comes out with a few moist crumbs.
  7. Cool & Slice: Let blondies cool in the pan for 15 minutes before transferring to a wire rack. Cut into squares and serve.

Notes

  • For non-alcoholic blondies, use rum extract or vanilla instead of dark rum.
  • Store blondies in an airtight container at room temperature for up to 3 days or refrigerate for 1 week.
  • To freeze: Wrap blondies individually and store in a ziplock bag for up to 3 months.
  • For extra chewiness, slightly underbake and let them finish setting while cooling.
