- ¾ cup unsalted butter, melted & spiced
- 1 cup light brown sugar, packed
- ¼ cup granulated sugar
- 1 large egg + 1 egg yolk
- 2 tablespoons dark rum (or rum extract)
- 1 teaspoon vanilla extract
Optional Mix-Ins:
- ½ cup white chocolate chips
- ½ cup toasted pecans
- ¼ cup dark chocolate chunks
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch or 9×9-inch square baking pan with parchment paper.
- Prepare Spiced Butter: Melt butter in a saucepan over medium heat. Stir in cinnamon, nutmeg, allspice, and cloves, cooking for 1 minute. Let cool for 5-10 minutes.
- Mix Wet Ingredients: Whisk brown sugar and granulated sugar with the spiced butter. Add eggs, vanilla, and rum, mixing until smooth.
- Combine Dry Ingredients: In a separate bowl, whisk flour, baking powder, and salt. Gradually fold into wet ingredients, stirring until just combined.
- Add Mix-Ins (Optional): Gently fold in white chocolate chips, pecans, or dark chocolate.
- Bake: Pour batter into the lined baking pan, spreading evenly. Bake for 25-30 minutes, or until the edges are golden and a toothpick inserted in the center comes out with a few moist crumbs.
- Cool & Slice: Let blondies cool in the pan for 15 minutes before transferring to a wire rack. Cut into squares and serve.
Notes
- For non-alcoholic blondies, use rum extract or vanilla instead of dark rum.
- Store blondies in an airtight container at room temperature for up to 3 days or refrigerate for 1 week.
- To freeze: Wrap blondies individually and store in a ziplock bag for up to 3 months.
- For extra chewiness, slightly underbake and let them finish setting while cooling.
