  • 4 oz Cream cheese
  • 12 Manicotti shells
  • 1 lb Bacon
  • Barbecue sauce and rub

Instructions

  1. Soften cream cheese and shred mozzarella.
  2. In a bowl, mix sausage, cream cheese, mozzarella, and barbecue rub.
  3. Use a piping bag to fill manicotti shells with the mixture.
  4. Wrap each filled shell in bacon, ensuring full coverage.
  5. Place on a wire rack over a sheet pan, apply additional rub.
  6. Allow to rest for at least 4 hours or overnight.
  7. Preheat smoker to 250°F and smoke for about 1 hour, turning halfway.
  8. Increase temperature to 350°F for crisping bacon; apply barbecue sauce and cook for an additional 15 minutes.
