A rich, cheesy, and comforting slow cooker casserole made with tender steak, creamy cheddar cheese, and perfectly cooked potatoes. An easy, hands-off recipe perfect for busy weeknights or meal prep!

Ingredients

Scale

Main Ingredients

  • 1.5 lbs steak (sirloin, ribeye, or chuck), thinly sliced
  • 4 large Russet or Yukon Gold potatoes, sliced into rounds
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup heavy cream
  • 4 tbsp butter, melted
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika (optional)
  • Salt & pepper, to taste
  • 2 tbsp chopped fresh parsley, for garnish

Optional Additions

  • ½ cup sour cream for extra creaminess
  • 1 tsp Dijon mustard for a tangy twist
  • ½ cup crispy bacon bits for added crunch
  • ½ cup sautéed onions for a deeper flavor

Instructions

1. Prep the Ingredients

  • Slice the steak and potatoes as evenly as possible for uniform cooking.
  • Grate the cheddar cheese for better melting.
  • In a small bowl, mix the seasonings (garlic powder, onion powder, paprika, salt, and pepper).

2. Layer the Ingredients in the Slow Cooker

  • Start with a layer of potatoes, overlapping slightly.
  • Sprinkle a little seasoning over the potatoes.
  • Add a layer of steak slices evenly across the potatoes.
  • Sprinkle shredded cheese over the steak.
  • Repeat the layers until all ingredients are used, finishing with a cheese topping.

3. Add the Liquid Ingredients

  • Drizzle melted butter and heavy cream over the layers.
  • If using sour cream or Dijon mustard, whisk them into the heavy cream before pouring.

4. Slow Cook to Perfection

  • Set to LOW and cook for 6-8 hours.
  • If in a hurry, cook on HIGH for 3-4 hours, but the potatoes may be firmer.

5. Add the Final Cheese Topping

  • In the last 30 minutes of cooking, sprinkle extra cheddar cheese on top and cover until melted.

6. Check for Doneness

  • Test the potatoes with a fork – they should be soft but not falling apart.
  • The steak should be tender and easy to cut with a fork.

7. Garnish and Serve

  • Sprinkle with fresh chopped parsley for a pop of color and flavor.
  • Serve warm and enjoy with a side of crusty bread or steamed vegetables.

Notes

  • For a thicker sauce, stir in 1 tbsp flour or cornstarch before adding cream.
  • For extra crispiness, transfer to a baking dish, sprinkle more cheese, and broil for 5 minutes before serving.
  • For a smoky flavor, add ½ tsp smoked paprika or chipotle powder.
  • To make it low-carb, swap potatoes for cauliflower or turnips.
