  • 1½ cups pineapple chunks
  • ½ cup water
  • ½ cup pineapple juice canned
  • 2 Tbsp dark brown sugar firmly packed
  • 4 Tbsp ketchup
  • 4 Tbsp Tshuyu Soup Base/Oigatsu concentrated
  • 2 Tbsp vinegar
  • ⅛ tsp white pepper
  • 1 Tbsp dark soy sauce
  • 1½ Tbsp corn starch
  • 2 tbsp water
  • chopped scallions
  • roasted sesame seeds

Instructions

  1. Heat oil in a skillet; sauté onion until charred. Add garlic and ginger; cook briefly.
  2. Brown chicken thighs skin-side down in the same skillet for about 5-6 minutes.
  3. Mix sauce ingredients in a bowl; set aside.
  4. Layer cooked onions and browned chicken in the slow cooker; pour sauce on top.
  5. Cook on high for 1½ hours; skim off excess fat.
  6. Stir in slurry and bell pepper; cook for an additional 20 minutes.
  7. Gently mix in pineapple chunks before serving hot.
