  • 12 ounces cooked Italian chicken sausage links
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 yellow onion
  • 1 teaspoon dried basil
  • 1 cup instant brown rice
  • 2 cloves garlic
  • 1 cup low-sodium chicken broth
  • 1 can (15 ounces) fire-roasted tomatoes

Instructions

  1. Heat 1 tablespoon of olive oil in a nonstick skillet over medium-high heat. Add sliced sausage and cook until browned (5-8 minutes). Remove and set aside.
  2. In the same skillet, add remaining olive oil, bell peppers, onion, basil, salt, and pepper. Sauté until softened (about 3 minutes).
  3. Stir in instant brown rice, minced garlic, and red pepper flakes. Cook until fragrant (30 seconds).
  4. Add chicken broth and fire-roasted tomatoes; bring to a boil. Cover and simmer on low for about 5 minutes.
  5. Stir in reserved sausage slices; cover again and let stand off heat for another 5 minutes until liquid is absorbed.
  6. Serve warm with chopped parsley on top.
