Classic Rotel Dip:

  • 1 lb ground beef or sausage
  • 1 can (10 oz) Rotel tomatoes (diced tomatoes with green chilies)
  • 1 lb Velveeta cheese, cubed

Optional Add-Ins:

  • ½ cup diced onions
  • ½ cup black beans or kidney beans
  • ½ tsp garlic powder
  • ½ cup diced bell peppers or jalapeños
  • ¼ cup sour cream or cream cheese
  • 1 tsp taco seasoning

Instructions

Stovetop Method:

  1. Cook the Meat: In a skillet over medium heat, cook ground beef or sausage until browned. Drain excess grease.
  2. Add Rotel Tomatoes: Pour the entire can (including juices) into the skillet and stir well.
  3. Melt the Cheese: Add Velveeta cubes, reduce heat to low, and stir frequently until smooth.
  4. Adjust Seasoning & Serve: Taste and adjust seasoning if needed. Serve warm with chips or crackers.

Slow Cooker Method:

  1. Brown the meat in a skillet, then transfer it to a slow cooker.
  2. Add Rotel tomatoes and Velveeta cheese.
  3. Cook on LOW for 2 hours, stirring occasionally.
  4. Serve straight from the slow cooker on the WARM setting.

Microwave Method:

  1. Cook ground meat in a skillet.
  2. Combine all ingredients in a microwave-safe bowl.
  3. Microwave in 1-minute intervals, stirring in between, until melted and smooth.
  4. Serve immediately.

Notes
