Classic Rotel Dip:

- 1 can (10 oz) Rotel tomatoes (diced tomatoes with green chilies)
- 1 lb Velveeta cheese, cubed
Optional Add-Ins:

- ½ cup black beans or kidney beans
- ½ tsp garlic powder
- ½ cup diced bell peppers or jalapeños
- ¼ cup sour cream or cream cheese
- 1 tsp taco seasoning
Instructions
Stovetop Method:
- Cook the Meat: In a skillet over medium heat, cook ground beef or sausage until browned. Drain excess grease.
- Add Rotel Tomatoes: Pour the entire can (including juices) into the skillet and stir well.
- Melt the Cheese: Add Velveeta cubes, reduce heat to low, and stir frequently until smooth.
- Adjust Seasoning & Serve: Taste and adjust seasoning if needed. Serve warm with chips or crackers.
Slow Cooker Method:
- Brown the meat in a skillet, then transfer it to a slow cooker.
- Add Rotel tomatoes and Velveeta cheese.
- Cook on LOW for 2 hours, stirring occasionally.
- Serve straight from the slow cooker on the WARM setting.
Microwave Method:
- Cook ground meat in a skillet.
- Combine all ingredients in a microwave-safe bowl.
- Microwave in 1-minute intervals, stirring in between, until melted and smooth.
