Instructions

  • In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
  • In another bowl, beat the eggs, milk, and vanilla extract.
  • Slowly add the wet ingredients to the dry ingredients, mixing until just combined.
  • Fold in the diced peaches gently.
  • Heat oil in a deep fryer or heavy pan to 375°F (190°C).
  • Drop spoonfuls of batter into the hot oil, frying 2–3 minutes on each side until golden.
  • Drain on a cooling rack lined with paper towels.
  • Optional: Whisk together glaze ingredients and drizzle over cooled fritters.

  • Use fresh, ripe peaches for the best flavor, or substitute with canned or frozen peaches if needed.
