Instructions
- In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
- In another bowl, beat the eggs, milk, and vanilla extract.
- Slowly add the wet ingredients to the dry ingredients, mixing until just combined.
- Fold in the diced peaches gently.
- Heat oil in a deep fryer or heavy pan to 375°F (190°C).
- Drop spoonfuls of batter into the hot oil, frying 2–3 minutes on each side until golden.
- Drain on a cooling rack lined with paper towels.
- Optional: Whisk together glaze ingredients and drizzle over cooled fritters.
Notes
- Use fresh, ripe peaches for the best flavor, or substitute with canned or frozen peaches if needed.
- For a healthier option, bake the fritters at 375°F for 12–15 minutes instead of frying.
