  • 2 teaspoons Kosher salt
  • 1 teaspoon black pepper
  • 32 ounces mozzarella cheese (cubed)
  • 40 ounces cherry tomatoes (halved)
  • 6 bell peppers (3 green and 3 red, diced)
  • 36 ounces sliced black olives (drained)
  • Fresh parsley for garnish

Instructions

  1. Cook the rotini pasta in a large pot according to package instructions until al dente. Drain and rinse under cold water.
  2. In a very large mixing bowl, combine half of the cooked pasta with half of the Italian dressing, salt, and pepper. Stir well.
  3. Add half of the mozzarella cheese, cherry tomatoes, diced bell peppers, and black olives; mix until combined.
  4. Repeat with the remaining ingredients until fully incorporated.
  5. Transfer the salad into large foil pans, cover tightly, and refrigerate for at least 24 hours before serving.
