  • 5 bone-in chicken thigh fillets (skin removed)
  • 1 onion (chopped)
  • 2 large garlic cloves (minced)
  • 2 tablespoons butter (or olive oil)
  • 1 ½ cups uncooked white rice
  • 1 ½ cups hot chicken broth
  • 1 ¼ cups hot water

Instructions

  1. Preheat your oven to 350°F (180°C).
  2. In a baking dish, scatter the chopped onion and garlic, then place butter in the center. Bake for 12-15 minutes until softened.
  3. Mix Chicken Rub ingredients in a bowl and season both sides of each chicken thigh.
  4. Stir uncooked rice into the onion mixture after removing it from the oven.
  5. Place seasoned chicken on top of the rice; pour hot broth and water around it.
  6. Cover with foil and bake for 30 minutes.
  7. Remove foil, optionally spray oil on chicken, and bake uncovered for another 20 minutes until golden.
  8. Let rest for 5 minutes before serving.
