Dry Ingredients:
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda

- 2 large eggs
- ¾ cup buttermilk (or milk + 1 tbsp lemon juice)
- ½ cup unsalted butter, melted
- Zest of one orange
- 2 tablespoons fresh orange juice

- 1 cup chopped fresh rhubarb (or frozen, thawed and drained)
- ½ cup chopped walnuts or pecans (optional)
- 1 teaspoon vanilla extract
Instructions
Step 1: Preheat & Prepare
- Preheat oven to 350°F (175°C).
- Grease or line a 9×5-inch loaf pan with parchment paper.
Step 2: Mix the Dry Ingredients
- In a large mixing bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
Step 3: Prepare the Wet Ingredients
- In another bowl, whisk eggs, buttermilk, melted butter, orange zest, and orange juice until well combined.
Step 4: Combine Wet & Dry Ingredients
- Gradually pour wet ingredients into dry ingredients, stirring gently. Do not overmix.
Step 5: Add Rhubarb & Nuts
- Toss rhubarb with 1 tablespoon of flour to prevent sinking, then fold into the batter along with nuts.
Step 6: Pour & Bake
- Pour batter into the loaf pan and smooth the top.
- Bake for 50-55 minutes, or until a toothpick inserted in the center comes out clean.
Step 7: Cool & Serve
- Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack.
- Slice and enjoy!
Notes
- For a sweeter loaf, increase sugar to 1¼ cups.
- For a healthier version, replace half the flour with whole wheat flour.
- If using frozen rhubarb, make sure to drain excess liquid before adding to the batter.
- Store at room temperature for 3 days or freeze for up to 3 months.
