Description

Dry Ingredients:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder

  • ¾ cup buttermilk (or milk + 1 tbsp lemon juice)
  • ½ cup unsalted butter, melted
  • Zest of one orange
  • 2 tablespoons fresh orange juice

Add-ins:

  • 1 cup chopped fresh rhubarb (or frozen, thawed and drained)
  • ½ cup chopped walnuts or pecans (optional)
  • 1 teaspoon vanilla extract

Instructions

Step 1: Preheat & Prepare

  1. Preheat oven to 350°F (175°C).
  2. Grease or line a 9×5-inch loaf pan with parchment paper.

Step 2: Mix the Dry Ingredients

  1. In a large mixing bowl, whisk together flour, sugar, baking powder, baking soda, and salt.

Step 3: Prepare the Wet Ingredients

  1. In another bowl, whisk eggs, buttermilk, melted butter, orange zest, and orange juice until well combined.

Step 4: Combine Wet & Dry Ingredients

  1. Gradually pour wet ingredients into dry ingredients, stirring gently. Do not overmix.

Step 5: Add Rhubarb & Nuts

  1. Toss rhubarb with 1 tablespoon of flour to prevent sinking, then fold into the batter along with nuts.

Step 6: Pour & Bake

  1. Pour batter into the loaf pan and smooth the top.
  2. Bake for 50-55 minutes, or until a toothpick inserted in the center comes out clean.

Step 7: Cool & Serve

  1. Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack.
  2. Slice and enjoy!

Notes

  • For a sweeter loaf, increase sugar to 1¼ cups.
  • For a healthier version, replace half the flour with whole wheat flour.
  • If using frozen rhubarb, make sure to drain excess liquid before adding to the batter.
