Ingredients

Scale
  • 1 tablespoon extra virgin olive oil
  • 1 pound smoked turkey sausage, sliced
  • 1 cup diced onion (about 1 medium onion)
  • 1 tablespoon minced garlic (about 23 fresh cloves)
  • 2 cups chicken broth
  • 1 (10-ounce) can diced tomatoes (with or without chiles)
  • 1/2 cup milk or heavy cream
  • 8 ounces dry pasta (such as rotini, penne, or farfalle)
  • Salt and pepper to taste
  • 1 cup shredded Cheddar-Jack cheese
  • 1/3 cup sliced scallions for garnish

Instructions

  1. In a large sauté pan over medium-high heat, add olive oil. Once hot, add sliced onions and sausage. Cook until lightly browned.
  2. Stir in minced garlic and cook for about 30 seconds until fragrant.
  3. Add chicken broth, undrained diced tomatoes, milk, dry pasta, salt, and pepper to taste. Bring to a boil.
  4. Cover the pan and reduce heat to low. Simmer for about 15 minutes or until pasta is tender and most liquid is absorbed.
  5. Turn off the heat and stir in half a cup of shredded cheese until melted. Sprinkle the remaining cheese on top and cover for five minutes to allow it to melt fully.
  6. Garnish with sliced scallions before serving.
