For the Crust
- 2 cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ¼ cup granulated sugar
For the White Chocolate Cheesecake Filling
- 16 ounces cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 8 ounces white chocolate, melted and cooled slightly
- 1 cup heavy whipping cream, whipped to soft peaks
For the Raspberry Swirl
- ½ cup raspberry preserves
- ½ cup fresh raspberries
Instructions
Step 1 – Prepare the Crust
- Crush graham crackers into fine crumbs using a food processor or rolling pin.
- Mix with melted butter and sugar until well combined.
- Press the mixture firmly into the bottom of a 9-inch springform pan.
- Chill in the refrigerator for at least 20 minutes.
Step 2 – Melt the White Chocolate
- Melt white chocolate using a double boiler or microwave in 30-second intervals.
- Stir until smooth and let cool slightly.
Step 3 – Make the Cheesecake Filling
- In a large bowl, beat cream cheese and powdered sugar until smooth.
- Add vanilla extract and mix well.
- Fold in melted white chocolate until fully combined.
- Whip heavy cream separately until soft peaks form, then gently fold into the mixture.
Step 4 – Assemble the Cheesecake
- Pour the cheesecake filling over the chilled crust and smooth the top with a spatula.
- Drop small spoonfuls of raspberry preserves on top and use a toothpick to create swirls.
- Scatter fresh raspberries on top for garnish.
Step 5 – Chill & Set
- Refrigerate for at least 6 hours or overnight for best results.
- Before serving, run a knife around the edges of the pan and carefully remove the springform.
Step 6 – Serve & Enjoy
- Slice with a hot knife for clean cuts.
- Serve as is or garnish with extra whipped cream and white chocolate shavings.
Notes
- Best served chilled for the perfect creamy texture.
- To freeze, wrap tightly and store for up to 3 months. Thaw in the refrigerator before serving.
- For a more intense raspberry flavor, increase the raspberry preserves to ¾ cup.
- To make it gluten-free, use gluten-free graham crackers.
