  • 5 guajillo peppers
  • 1 large white onion
  • 3 large tomatoes
  • 5 cloves garlic
  • 1 tablespoon olive oil
  • 4 cups beef stock
  • 1 tablespoon dried Mexican oregano
  • 1 tablespoon sea salt
  • 1 teaspoon cinnamon
  • 1 teaspoon cumin
  • 1 teaspoon ground ginger
  • 1 teaspoon black pepper
  • ½ cup apple cider vinegar
  • 2 large roasted tomatoes

Instructions

  1. Prepare chilies by toasting them in a large pan until fragrant. Soak in hot water for 20 minutes.
