Description

Indulge in this creamy and flavorful Marry Me Chicken! Tender chicken thighs simmered in a luxurious parmesan cream sauce with sun-dried tomatoes. Perfect for romantic dinners, special occasions, or comforting family meals.

Ingredients

Scale
  • 46 boneless, skinless chicken thighs
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • ½ cup sun-dried tomatoes, chopped
  • ½ cup freshly grated parmesan cheese
  • 1 tablespoon minced garlic
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • Optional: Fresh basil or red pepper flakes for garnish

Instructions

  • Prepare the Chicken:
    • Pat the chicken thighs dry and season both sides generously with salt, pepper, and Italian seasoning.
  • Sear the Chicken:
    • Heat olive oil in a large skillet over medium heat.
    • Sear the chicken for 4-5 minutes on each side until golden brown. Remove and set aside.
  • Sauté Garlic:
    • In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
  • Make the Sauce:
    • Lower the heat and stir in heavy cream. Gradually add parmesan cheese, stirring continuously until smooth.
  • Add Sun-Dried Tomatoes:
    • Stir in the chopped sun-dried tomatoes and let the sauce simmer gently for 2-3 minutes.
  • Simmer the Chicken:
    • Return the chicken thighs to the skillet, nestling them into the sauce.
    • Spoon the sauce over the chicken, cover, and simmer on low heat for 10-12 minutes or until the chicken is cooked through (165°F internal temperature).
  • Garnish and Serve:
    • Remove from heat, garnish with fresh basil or red pepper flakes, and serve hot with your favorite sides.

Notes

  • For a dairy-free version, substitute heavy cream with coconut cream and parmesan with nutritional yeast.
  • If the sauce is too thick, add a splash of chicken broth to adjust the consistency.
  • Leftovers can be stored in the fridge for up to 3 days or frozen for up to 3 months.
