  • 2 medium zucchini, sliced
  • 2 medium yellow squash, sliced
  • 4 tablespoons fresh basil, chopped
  • 2 tablespoons thinly sliced green onion
  • 1/2 teaspoon dried thyme
  • 3/4 teaspoon garlic powder
  • 1 cup grated mozzarella cheese, divided
  • 1/2 cup grated Parmesan cheese, plus extra for topping (optional)
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Preheat your oven to 350°F (180°C) and grease an 8" x 8" baking dish.
  2. In a large bowl, mix sliced zucchini, yellow squash, basil, garlic powder, half the mozzarella, and half the Parmesan. Season with salt and pepper.
