  • 1 cup full-fat sour cream
  • 1 and 1/4 cups granulated sugar
  • 3 large eggs
  • 1/2 cup key lime juice
  • 2 tablespoons key lime zest

Instructions

  1. Preheat oven to 350°F. Line a 9×13-inch pan with aluminum foil and lightly spray with nonstick spray.
  2. Combine graham cracker crumbs, sugar, melted butter, ginger, and salt in a bowl. Press the mixture into the bottom of the pan. Bake for 10 minutes.
  3. Reduce oven temperature to 325°F. In a food processor or mixer, blend cream cheese and sour cream until smooth. Add sugar, vanilla extract, and lime zest; mix well.
  4. On low speed, add eggs one at a time until just combined. Fold in heavy cream, key lime juice, and flour.
  5. Pour filling over crust and bake for 38-40 minutes until edges are set but center jiggles slightly.
  6. Allow to cool at room temperature for one hour before refrigerating for at least five hours or overnight.
