  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dry mustard
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a mixing bowl, combine dark brown sugar, smoked paprika, garlic powder, ground cumin, dry mustard, kosher salt, and black pepper. Toss with diced chicken until well-coated and let rest for 10-20 minutes.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Cook the seasoned chicken until browned and fully cooked (about 3-4 minutes). Remove from the skillet.
  3. Add another 2 tablespoons of olive oil to the skillet and add chilled rice. Stir-fry briefly.
  4. Create a well in the center of the rice and scramble the eggs until set. Mix into the rice.
  5. Pour in the Japanese BBQ sauce and stir until caramelized (30-60 seconds).
  6. Add the cooked chicken back into the pan and mix thoroughly before serving.
