  • 1 tablespoon oil
  • 1 teaspoon salt
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika (optional)
  • 1 pound baby red potatoes
  • 4 large carrots, chopped into 2-inch pieces (or 1 pound baby carrots)
  • 1 large yellow onion, diced
  • 4 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1/4 cup water
  • 2 tablespoons cornstarch

Instructions

  1. Season the roast by rubbing it with salt, onion powder, garlic powder, black pepper, and smoked paprika.
  2. Set your Instant Pot to the Sauté function. Add oil and sear the roast for 2-3 minutes on each side until browned. Remove and set aside.
  3. Deglaze the pot with beef broth and Worcestershire sauce, scraping up any browned bits.
  4. Place the roast back in the pot and add potatoes, carrots, and onions around it.
  5. Lock the lid and cook on High for 60 minutes (3 lb roast) or 80-90 minutes (4-5 lb roast).
  6. Allow for a natural pressure release for 10 minutes followed by a controlled quick release.
  7. Shred the roast into chunks.
  8. To make gravy, whisk together water and cornstarch to create a slurry; add it to the simmering liquid in the pot until thickened.
