  • 5 strips bacon
  • 68 cups romaine lettuce, roughly chopped

Instructions

  1. In a bowl, whisk together Dijon mustard, honey, olive oil, apple cider vinegar, salt, pepper, and minced garlic.
  2. Marinate chicken thighs in half the mixture for 30 minutes to 2 hours.
  3. Cook bacon until crispy; set aside and leave some grease in the pan.
  4. In the same pan, cook marinated chicken until golden brown on both sides. Slice once cooked.
  5. Assemble salad by layering romaine lettuce, chopped bacon, cherry tomatoes, red onion slices, avocado slices, and grilled chicken strips in a bowl. Drizzle with remaining dressing before serving.
