  • 3 cups broccoli florets
  • 1 lb ground beef
  • 1 yellow onion, diced
  • 1 red bell pepper, sliced
  • 2 tablespoons cornstarch + 2 tablespoons cold water
  • 1 cup beef broth
  • 1/4 cup soy sauce
  • 3 tablespoons packed brown sugar
  • 12 tablespoons honey
  • 2 cloves garlic, minced
  • 1/2 teaspoon ground ginger
  • 1 teaspoon toasted sesame oil
  • 3 cups cooked rice
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. In a small bowl, mix cornstarch with cold water; set aside. In another bowl, combine beef broth, soy sauce, brown sugar, honey, garlic, ginger, and sesame oil.
  2. Heat oil in a large skillet over medium heat. Cook broccoli for 4-5 minutes until bright green; remove from pan.
  3. In the same skillet over medium-high heat, cook seasoned ground beef and onions until browned. Drain excess grease and add bell peppers; cook for an additional minute.
  4. Pour in the sauce mixture; bring to a boil and simmer for 2-3 minutes. Stir in the cornstarch mixture until thickened.
  5. Return broccoli to the skillet; stir everything together and serve over cooked rice.
