  • 4 ounces cream cheese (softened)

  • BBQ sauce for basting
  • 2 tablespoons coconut sugar
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon chili powder
  • 1 ½ teaspoon Kosher salt
  • ½ teaspoon freshly ground black pepper

Instructions

  1. Preheat your grill to medium heat (350-375°F).
  2. In a small bowl, combine rub ingredients: coconut sugar, garlic powder, onion powder, oregano, chili powder, salt, and pepper.
  3. In another bowl, mix cream cheese with 2 tablespoons of the rub and shredded cheddar until smooth.
  4. Slice jalapeños in half lengthwise and scoop out seeds. Prepare chicken by slicing it open like a book and pounding to an even thickness.
  5. Stuff each chicken breast with jalapeño halves and cream cheese mixture, then wrap with two slices of bacon and secure with toothpicks.
  6. Grill chicken for about 6 minutes per side or until fully cooked (165°F internal temperature), basting with BBQ sauce during the last few minutes.
