For the Garlic Butter Steak Tips:

  • 1.5 lbs sirloin steak tips, cut into bite-sized pieces
  • 2 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp smoked paprika
  • ½ tsp onion powder
  • ¼ tsp red pepper flakes (optional)
  • 1 tbsp Worcestershire sauce
  • 1 tsp fresh thyme, chopped

For the Cheesy Rigatoni:

  • 12 oz rigatoni pasta
  • 1 cup heavy cream
  • 1½ cups shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp ground nutmeg
  • ½ tsp Dijon mustard
  • ¼ cup reserved pasta water (if needed)

Instructions

For the Steak Tips:

  1. Pat the steak dry and season with salt, pepper, smoked paprika, onion powder, and red pepper flakes.
  2. Heat a cast-iron skillet over medium-high heat, add olive oil, and sear the steak for 3-4 minutes per side until browned.
  3. Reduce heat, add butter, minced garlic, Worcestershire sauce, and thyme. Stir to coat the steak.
  4. Cook for another minute, then remove from heat and let rest.

For the Cheesy Rigatoni:

  1. Cook rigatoni in salted boiling water until al dente. Reserve ¼ cup of pasta water before draining.
  2. In a saucepan, melt butter over medium heat and sauté garlic.
  3. Stir in heavy cream and heat gently.
  4. Gradually add cheddar, mozzarella, and Parmesan, stirring constantly.
  5. Season with salt, pepper, nutmeg, and Dijon mustard.
  6. Adjust consistency with reserved pasta water if needed.
  7. Toss cooked rigatoni in the cheese sauce until fully coated.

Plating & Serving:

  • Arrange rigatoni on plates or in a serving dish.
  • Top with garlic butter steak tips.
  • Drizzle extra garlic butter sauce over the dish.
  • Garnish with Parmesan and fresh parsley.

Notes

  • For extra flavor, add caramelized onions or sautéed mushrooms.
  • For a lighter version, use half-and-half instead of heavy cream.
  • Best cheese choices: Sharp cheddar, mozzarella, and Parmesan for a balanced sauce.
  • Let steak rest before serving to keep it juicy.
