For the Cheesy Rigatoni:
- 12 oz rigatoni pasta
- 1 cup heavy cream
- 1½ cups shredded sharp cheddar cheese
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 2 tbsp butter
- 2 cloves garlic, minced
- ½ tsp salt
- ¼ tsp black pepper
- ¼ tsp ground nutmeg
- ½ tsp Dijon mustard
- ¼ cup reserved pasta water (if needed)
Instructions
For the Steak Tips:
- Pat the steak dry and season with salt, pepper, smoked paprika, onion powder, and red pepper flakes.
- Heat a cast-iron skillet over medium-high heat, add olive oil, and sear the steak for 3-4 minutes per side until browned.
- Reduce heat, add butter, minced garlic, Worcestershire sauce, and thyme. Stir to coat the steak.
- Cook for another minute, then remove from heat and let rest.
For the Cheesy Rigatoni:
- Cook rigatoni in salted boiling water until al dente. Reserve ¼ cup of pasta water before draining.
- In a saucepan, melt butter over medium heat and sauté garlic.
- Stir in heavy cream and heat gently.
- Gradually add cheddar, mozzarella, and Parmesan, stirring constantly.
- Season with salt, pepper, nutmeg, and Dijon mustard.
- Adjust consistency with reserved pasta water if needed.
- Toss cooked rigatoni in the cheese sauce until fully coated.
Plating & Serving:
- Arrange rigatoni on plates or in a serving dish.
- Top with garlic butter steak tips.
- Drizzle extra garlic butter sauce over the dish.
- Garnish with Parmesan and fresh parsley.
