Ingredients

Scale

For the Steak Bites:

  • 1.5 lbs steak (ribeye, sirloin, or filet mignon), cut into bite-sized pieces
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter, divided
  • 5 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • 1 tbsp fresh thyme (or ½ tsp dried thyme)

For the Potatoes:

  • 2 cups baby potatoes or Yukon Gold potatoes, cubed
  • 1 tbsp olive oil
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp smoked paprika
  • ½ tsp dried rosemary

Instructions

Step 1: Prepare the Steak

  1. Cut the steak into bite-sized cubes (about 1-inch pieces).
  2. Pat dry with paper towels to remove excess moisture.
  3. Season with salt, black pepper, and paprika. Toss to coat evenly.

Step 2: Cook the Potatoes

  1. Heat 1 tbsp olive oil in a large cast iron skillet over medium-high heat.
  2. Add potatoes and season with salt, pepper, smoked paprika, and rosemary.
  3. Cook, stirring occasionally, for 8-10 minutes until golden and crispy.
  4. Remove from the skillet and set aside.

Step 3: Cook the Steak Bites

  1. In the same skillet, heat 2 tbsp olive oil over high heat.
  2. Add the steak bites in a single layer (work in batches if needed).
  3. Sear for 2 minutes per side, flipping only once to get a perfect crust.
  4. Reduce heat to medium-low, add 2 tbsp butter and minced garlic.
  5. Toss the steak bites in the garlic butter for 1-2 minutes, ensuring they are well coated.

Step 4: Combine and Serve

  1. Return the crispy potatoes to the skillet.
  2. Add the remaining 1 tbsp butter and toss everything together.
  3. Garnish with fresh thyme or parsley.
  4. Serve hot and enjoy!

Notes

  • Best Steak Options: Ribeye, sirloin, or filet mignon work best for tenderness.
  • Extra Crispy Potatoes: Parboil the potatoes for 5 minutes before frying for the crispiest texture.
  • Dairy-Free Option: Substitute butter with ghee or dairy-free butter.
  • Reheating Tip: Reheat in a skillet over medium heat with a little butter for the best flavor and texture.
