  • ¼ cup ghee or butter
  • 1 tablespoon olive oil
  • 3 garlic cloves, minced
  • 1 teaspoon dried thyme
  • ½ teaspoon dried oregano
  • ½ teaspoon sea salt, plus more to taste
  • ¼ teaspoon ground black pepper, plus more to taste
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Heat a large cast-iron skillet over medium heat and add olive oil and 2 tablespoons of ghee.
  2. Add the potatoes, garlic, thyme, oregano, sea salt, and pepper. Cook for about 8-10 minutes until golden and fork-tender.
  3. Remove the potatoes from the skillet and set aside.
  4. Increase heat to medium-high, add remaining ghee, then add seasoned steak bites. Sear for about 3-4 minutes until golden brown.
  5. Return cooked potatoes to the skillet, mixing well to combine. Adjust seasoning if necessary.
