- 1 cup heavy cream
- 1 cup unsweetened almond milk (or hemp milk)
- 1/3 cup Swerve Sweetener
- 1 tbsp allulose
- 1/3 cup unsweetened cocoa powder
- 1 teaspoon vanilla extract
- 1/4 tsp xanthan gum
Instructions
- In a medium saucepan over medium-high heat, whisk together heavy cream, almond milk, Swerve Sweetener, and cocoa powder. Bring to a boil while stirring frequently for about one minute.
- Remove from heat and stir in vanilla extract. Sprinkle xanthan gum on top and whisk until fully combined. Let cool for at least 10 minutes.
- Carefully pour the mixture into popsicle molds almost to the top.
- Freeze for about one hour; then insert sticks two-thirds of the way into the partially frozen pops. Return to the freezer until solid (at least five hours).
- To unmold, run warm water over the outside of the molds for 5-10 seconds and gently pull out each popsicle.
