Ingredients

  • 1 cup heavy cream
  • 1 cup unsweetened almond milk (or hemp milk)
  • 1/3 cup Swerve Sweetener
  • 1 tbsp allulose
  • 1/3 cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 1/4 tsp xanthan gum

Instructions

  1. In a medium saucepan over medium-high heat, whisk together heavy cream, almond milk, Swerve Sweetener, and cocoa powder. Bring to a boil while stirring frequently for about one minute.
  2. Remove from heat and stir in vanilla extract. Sprinkle xanthan gum on top and whisk until fully combined. Let cool for at least 10 minutes.
  3. Carefully pour the mixture into popsicle molds almost to the top.
  4. Freeze for about one hour; then insert sticks two-thirds of the way into the partially frozen pops. Return to the freezer until solid (at least five hours).
  5. To unmold, run warm water over the outside of the molds for 5-10 seconds and gently pull out each popsicle.
