  • 1 ½ teaspoons ground cumin
  • ¼ teaspoon cayenne pepper
  • ½ teaspoon dried oregano
  • ½ teaspoon paprika
  • ½ small lime, juiced
  • Salt and freshly ground black pepper, to taste
  • 2 (15 oz) cans great northern beans, drained and rinsed
  • 1 cup sour cream or plain Greek yogurt
  • 1 cup corn (frozen or fresh)
  • 2 heaping cups cooked chicken, shredded (rotisserie or leftover)

Instructions

  1. Sauté chopped onion in olive oil until softened. Add minced garlic and cook until fragrant.
  2. Stir in chicken broth, diced green chilies, cumin, cayenne pepper, paprika, oregano, salt, and pepper. Bring to a simmer.
  3. Rinse great northern beans; blend some with broth for creaminess (optional). Add both blended and whole beans along with corn to the pot.
  4. Simmer uncovered for 15-30 minutes until heated through.
  5. Remove from heat; stir in sour cream or Greek yogurt and shredded chicken.
  6. Ladle into bowls and garnish with toppings of your choice.
