  • 12 jumbo pasta shells
  • 1½ cups ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • ½ cup parmesan cheese, grated
  • 1 large egg
  • 1 cup fresh spinach, chopped
  • 2 cups marinara sauce
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Boil salted water in a large pot and cook the jumbo shells until al dente. Drain and cool.
  3. In a skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant; add spinach and cook until wilted. Season with salt and pepper.
  4. In a mixing bowl, combine ricotta, mozzarella, parmesan, egg, nutmeg (optional), and sautéed spinach mixture.
  5. Spread marinara sauce on the bottom of a baking dish. Stuff each shell with the filling and place seam-side up in the dish. Top with remaining marinara sauce and sprinkle extra mozzarella.
  6. Cover with aluminum foil and bake for 25 minutes; remove foil and bake for an additional 10 minutes until bubbly.
