Ingredients

Scale
  • 500 g (4 cups) bread flour
  • 7 g (2 1/4 teaspoons) instant yeast
  • 2 teaspoons kosher salt
  • 480 g (2 cups) lukewarm water
  • 6 tablespoons high-quality extra-virgin olive oil (divided)
  • Flaky salt (for topping)
  • Optional: 1 tablespoon chopped rosemary

Instructions

  1. In a mixing bowl, combine the bread flour, yeast, and kosher salt. Create a well in the center and add lukewarm water. Mix until you form a wet dough.
  2. Drizzle 30 g (2 tablespoons) of olive oil over the dough and rub to coat. Cover tightly and refrigerate for at least 18 hours.
  3. Grease a baking pan with non-stick spray and drizzle remaining olive oil in the center.
  4. Remove dough from the fridge, shape it into a ball, and place it in the prepared pan. Let rise in a warm spot for 3-4 hours until nearly filling the pan.
  5. Preheat oven to 425°F (218°C). Make dimples in the dough, drizzle with olive oil, sprinkle with toppings, then bake for 25-30 minutes until golden brown.
