- 4 boneless, skinless chicken breasts
- 1 cup freshly grated Parmesan cheese
- 1 cup panko breadcrumbs
- 2 large eggs (beaten)
- 1/2 cup all-purpose flour
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 3 tbsp olive oil or butter
Instructions
- Pound chicken breasts to an even thickness of about 1/2 inch.
- Set up dredging stations: flour in one bowl, beaten eggs in the second, and Parmesan-breadcrumb mixture in the third.
- Coat chicken: dredge in flour, dip in eggs, then press into the Parmesan-breadcrumb mix.
- Heat olive oil in a skillet over medium heat. Cook chicken for 4-5 minutes per side until golden and crispy, with an internal temperature of 165°F.
- Rest for 5 minutes before serving.
