  • 1 tsp paprika.
  • ½ tsp onion powder.
  • ½ tsp black pepper.
  • ½ tsp salt.

For the Buffalo Sauce:

  • ½ cup hot sauce (Frank’s RedHot is ideal).
  • 2 tbsp melted vegan butter (or regular butter).
  • 1 tsp white vinegar (optional).

Optional Garnishes:

  • Chopped parsley.
  • Nutritional yeast.
  • Vegan ranch or blue cheese dressing (for dipping).

Instructions

  • Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • Wash and pat dry the cauliflower. Cut it into evenly sized, bite-sized florets.
  • In a mixing bowl, whisk together the flour, almond milk, garlic powder, paprika, onion powder, black pepper, and salt until smooth.
  • Dip each cauliflower floret into the batter, ensuring full coverage. Shake off excess batter and place the florets on the baking sheet in a single layer.
  • Bake for 20 minutes, flipping halfway through, until golden brown.
  • While the cauliflower bakes, prepare the Buffalo sauce by whisking together the hot sauce, melted butter, and white vinegar.
  • Remove the cauliflower from the oven and toss in the Buffalo sauce until evenly coated.
  • Return the coated florets to the baking sheet and bake for an additional 5-7 minutes to set the sauce and crisp the edges.
  • Cool for 5 minutes before serving. Garnish as desired and serve with your favorite dipping sauce.
