Ingredients
- 2 tbsp butter
- 2 boneless, skinless chicken breasts (or 2 cups diced rotisserie chicken)
- 2½ cups chicken broth
- 1¼ cups white long-grain rice (uncooked)
- 2 cups fresh broccoli florets (or frozen)
- 10.5 oz condensed cream of chicken soup
- ½ cup milk
- ½ cup sour cream
- 2 cups shredded cheddar cheese (divided)
- 1 cup crushed Ritz crackers
- 2 tbsp melted butter
Instructions
- Preheat oven to 350°F (175°C).
- In a large pot, melt butter over medium heat; add chicken and cook until golden brown.
- Stir in chicken broth, rice, and olive oil; bring to a boil.
- Reduce heat; cover and simmer for about 15 minutes until rice is tender.
- Add broccoli and cover for additional cooking time if necessary.
- Combine cooked ingredients with soup, milk, sour cream, and half the cheese.
- Transfer mixture to greased casserole dish; top with remaining cheese and cracker mixture.
- Bake covered for 15 minutes, then uncover and bake another 10 minutes until bubbly.
