  • 2½ cups chicken broth
  • 1¼ cups white long-grain rice (uncooked)
  • 2 cups fresh broccoli florets (or frozen)
  • 10.5 oz condensed cream of chicken soup
  • ½ cup milk
  • ½ cup sour cream
  • 2 cups shredded cheddar cheese (divided)
  • 1 cup crushed Ritz crackers
  • 2 tbsp melted butter

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large pot, melt butter over medium heat; add chicken and cook until golden brown.
  3. Stir in chicken broth, rice, and olive oil; bring to a boil.
  4. Reduce heat; cover and simmer for about 15 minutes until rice is tender.
  5. Add broccoli and cover for additional cooking time if necessary.
  6. Combine cooked ingredients with soup, milk, sour cream, and half the cheese.
  7. Transfer mixture to greased casserole dish; top with remaining cheese and cracker mixture.
  8. Bake covered for 15 minutes, then uncover and bake another 10 minutes until bubbly.
