Ingredients
- Chicken Breasts: 2 medium, diced
- Broccoli: 2 cups, florets
- Pasta: 300g penne or fusilli
- Olive Oil or Butter: 2 tablespoons
- Garlic: 4 cloves, minced
- Chicken Stock: 1 cup (optional)
- Heavy Cream: 1 cup
- Parmesan Cheese: ½ cup, grated
- Salt and Pepper: To taste
- Italian Seasoning: 1 teaspoon
- Red Pepper Flakes: Optional
Instructions
- Cook the Pasta: Boil pasta in salted water until al dente. Reserve ½ cup pasta water. Drain and set aside.
- Cook the Chicken: Heat olive oil in a skillet. Season chicken with salt, pepper, and Italian seasoning. Sauté until golden and fully cooked. Remove and set aside.
- Blanch the Broccoli: Boil broccoli for 1-2 minutes until tender-crisp. Drain and set aside.
- Make the Sauce: In the same skillet, sauté garlic until fragrant. Add chicken stock, heavy cream, and Parmesan. Stir until the sauce thickens.
- Combine Everything: Add chicken, broccoli, and pasta to the sauce. Toss to coat evenly. Adjust seasoning if needed.
- Serve: Garnish with additional Parmesan cheese and enjoy immediately.
