For the Dough:

  • 2 ½ cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 packet (2 ¼ teaspoons) active dry yeast
  • ¾ cup warm water
  • 1 tablespoon olive oil

For the Toppings:

  • 2 large yellow onions, thinly sliced
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 teaspoon balsamic vinegar
  • 2 cups cremini or shiitake mushrooms, sliced
  • 1 clove garlic, minced
  • 1 teaspoon fresh thyme (or ½ teaspoon dried)
  • Salt and black pepper, to taste
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup crumbled goat cheese or grated parmesan
  • ½ cup tomato sauce or white sauce (optional)

Instructions

1. Prepare the Dough

  1. Combine warm water, sugar, and yeast in a small bowl. Let sit for 5-10 minutes until foamy.
  2. In a large mixing bowl, whisk together flour and salt.
  3. Add olive oil and yeast mixture to the flour, stirring to combine.
  4. Knead the dough for 8-10 minutes until smooth and elastic.
  5. Place in an oiled bowl, cover, and let rise for 1 hour or until doubled in size.

2. Caramelize the Onions

  1. Heat butter and olive oil in a skillet over medium-low heat.
  2. Add sliced onions and cook, stirring occasionally, for 25-30 minutes until golden brown.
  3. Stir in balsamic vinegar and cook for 5 more minutes.

3. Sauté the Mushrooms

  1. Heat olive oil in a pan over medium heat.
  2. Add mushrooms and cook for 5-7 minutes until golden and tender.
  3. Stir in garlic, thyme, salt, and black pepper. Cook for another minute.

4. Assemble the Pizza

  1. Preheat oven to 475°F (245°C).
  2. Roll out dough into a 12-inch circle on a floured surface.
  3. Transfer to a parchment-lined baking sheet.
  4. Spread tomato or white sauce (if using).
  5. Sprinkle mozzarella cheese, then add caramelized onions and sautéed mushrooms.
  6. Top with goat cheese or parmesan.

5. Bake & Serve

  1. Bake for 12-15 minutes until the crust is golden and cheese is bubbly.
  2. Let cool for a few minutes before slicing.
  3. Garnish with fresh thyme and serve warm.
