For the Dough:
- 2 ½ cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 packet (2 ¼ teaspoons) active dry yeast
- ¾ cup warm water
- 1 tablespoon olive oil
For the Toppings:
- 2 large yellow onions, thinly sliced
- 1 tablespoon butter
- 1 tablespoon olive oil
- 1 teaspoon balsamic vinegar
- 2 cups cremini or shiitake mushrooms, sliced
- 1 clove garlic, minced
- 1 teaspoon fresh thyme (or ½ teaspoon dried)
- Salt and black pepper, to taste
- 1 ½ cups shredded mozzarella cheese
- ½ cup crumbled goat cheese or grated parmesan
- ½ cup tomato sauce or white sauce (optional)
Instructions
1. Prepare the Dough
- Combine warm water, sugar, and yeast in a small bowl. Let sit for 5-10 minutes until foamy.
- In a large mixing bowl, whisk together flour and salt.
- Add olive oil and yeast mixture to the flour, stirring to combine.
- Knead the dough for 8-10 minutes until smooth and elastic.
- Place in an oiled bowl, cover, and let rise for 1 hour or until doubled in size.
2. Caramelize the Onions
- Heat butter and olive oil in a skillet over medium-low heat.
- Add sliced onions and cook, stirring occasionally, for 25-30 minutes until golden brown.
- Stir in balsamic vinegar and cook for 5 more minutes.
3. Sauté the Mushrooms
- Heat olive oil in a pan over medium heat.
- Add mushrooms and cook for 5-7 minutes until golden and tender.
- Stir in garlic, thyme, salt, and black pepper. Cook for another minute.
4. Assemble the Pizza
- Preheat oven to 475°F (245°C).
- Roll out dough into a 12-inch circle on a floured surface.
- Transfer to a parchment-lined baking sheet.
- Spread tomato or white sauce (if using).
- Sprinkle mozzarella cheese, then add caramelized onions and sautéed mushrooms.
- Top with goat cheese or parmesan.
5. Bake & Serve
- Bake for 12-15 minutes until the crust is golden and cheese is bubbly.
- Let cool for a few minutes before slicing.
- Garnish with fresh thyme and serve warm.
