- ¾ cup old-fashioned oats
- ½ cup all-purpose flour
- ¼ cup granulated sugar
- ¼ cup brown sugar
- ½ tsp cinnamon
- ¼ tsp salt
- ½ cup cold butter, cubed
Caramel Drizzle
- ½ cup brown sugar
- ¼ cup unsalted butter
- ¼ cup heavy cream
- ¼ tsp sea salt (optional)
Instructions
- Preheat oven to 350°F (175°C) and grease a mini muffin tin.
- Make the Apple Filling: In a bowl, mix diced apples with lemon juice, brown sugar, cinnamon, nutmeg, and cornstarch. Let sit for 10 minutes.
- Prepare the Crisp Topping: In another bowl, combine oats, flour, sugars, cinnamon, and salt. Add cubed butter and mix until crumbly.
- Assemble: Spoon apple mixture into muffin cups and top with crisp mixture.
- Bake for 18-22 minutes, or until the topping is golden and crisp. Let cool for 10 minutes before removing.
- Make the Caramel Drizzle: In a saucepan over medium heat, melt butter and brown sugar. Stir in heavy cream and let simmer for 3-5 minutes until thickened.
