Description

Buffalo chicken meatballs are a spicy, tangy, and protein-packed appetizer or meal. These baked meatballs are coated in rich Buffalo sauce and perfect for game day, meal prep, or a weeknight dinner. Serve them with ranch or blue cheese dressing for the ultimate flavor experience.

Meatballs:

  • 1 lb ground chicken
  • ½ cup panko breadcrumbs
  • 1 egg
  • ¼ cup milk
  • ¼ cup finely diced onion
  • 2 garlic cloves, minced
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder

Buffalo Sauce:

  • ½ cup hot sauce (Frank’s RedHot recommended)
  • ¼ cup melted butter
  • 1 tablespoon honey
  • ½ teaspoon Worcestershire sauce

Optional Garnishes:

  • Chopped parsley
  • Blue cheese crumbles
  • Ranch or blue cheese dressing

Instructions

Step 1: Preheat the Oven

Preheat oven to 400°F. Line a baking sheet with parchment paper or grease it lightly.

Step 2: Mix the Ingredients

In a large mixing bowl, combine ground chicken, breadcrumbs, egg, milk, onion, garlic, and seasonings. Mix gently until combined.

Step 3: Shape the Meatballs

Using a spoon or cookie scoop, form 1-inch meatballs. Roll gently between your palms and place them on the baking sheet.

Step 4: Bake the Meatballs

Bake for 18-20 minutes or until the internal temperature reaches 165°F.

Step 5: Make the Buffalo Sauce

In a small saucepan over low heat, melt the butter. Stir in hot sauce, honey, and Worcestershire sauce until combined.

Step 6: Toss & Serve

Place cooked meatballs in a large bowl and pour the Buffalo sauce over them. Toss gently to coat. Serve with blue cheese crumbles, parsley, and dipping sauces.

Notes

  • For a crispier texture, broil the meatballs for the last 2-3 minutes.
  • Adjust the spice level by adding more or less hot sauce.
  • Can be made ahead and stored in the fridge for up to 4 days or frozen for up to 3 months.v
