  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 can (15 oz) black beans, drained and rinsed
  • 8 corn tortillas
  • 2 cups shredded cheddar cheese
  • 2 cups shredded Monterey Jack cheese

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. In a skillet over medium heat, brown ground beef with diced onion and minced garlic; drain excess fat.
  3. Add enchilada sauce, diced tomatoes, black beans, cumin, chili powder, salt, and pepper; stir and simmer for 5 minutes.
  4. Layer half of the mixture over four corn tortillas in the baking dish; top with half of both cheeses. Repeat layers.
