Ingredients
- 3–4 boneless skinless chicken breasts
- 3–4 russet potatoes
- 1 small yellow onion
- 1/4 cup half & half or heavy cream
- 3/4 cup shredded cheddar cheese
- 2 slices uncooked bacon
- 1 tbsp butter
- 2 green onions
- Salt and pepper to taste
- Paprika to taste
- 1 tbsp sour cream
- 2 tsp ranch seasoning mix
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/2 tsp pepper
Instructions
- Preheat oven to 350°F and spray a 9×13-inch baking dish with non-stick spray.
- In a bowl, mix ranch sauce ingredients: half & half, sour cream, ranch seasoning, paprika, salt, and pepper.
- Layer sliced onions at the bottom of the baking dish; add diced potatoes seasoned with salt and pepper.
- Place chicken on top of potatoes; drizzle with ranch sauce and dot with butter and bacon bits.
- Cover with foil and bake for about 1 hour.
