  • 6 slices bacon, chopped
  • 1 lb ground beef
  • 1 cup mushrooms, sliced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 stalk celery, diced
  • 1 carrot, grated
  • 3 cups beef broth
  • 1 cup heavy cream
  • 2 cups Swiss cheese, shredded
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • Salt & pepper to taste
  • 1 tbsp butter (optional)

Instructions

  1. Cook the bacon in a Dutch oven until crispy. Remove and set aside.
  2. Sauté the onion, garlic, celery, carrots, and mushrooms in the bacon grease.
  3. Brown the ground beef in the same pot. Drain excess grease.
  4. Add beef broth, Worcestershire sauce, and Dijon mustard. Simmer for 10 minutes.
  5. Lower the heat and stir in heavy cream. Slowly add Swiss cheese, stirring until smooth.
  6. Return bacon to the pot, stir well, and adjust seasoning.
  7. Serve hot, garnished with extra cheese and fresh parsley.

  • For a thicker soup, mix 1 tbsp cornstarch with 2 tbsp water and stir in before adding cheese.
