Ingredients
Scale
- 6 slices bacon, chopped
- 1 lb ground beef
- 1 cup mushrooms, sliced
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 stalk celery, diced
- 1 carrot, grated
- 3 cups beef broth
- 1 cup heavy cream
- 2 cups Swiss cheese, shredded
- 1 tbsp Worcestershire sauce
- 1 tsp Dijon mustard
- Salt & pepper to taste
- 1 tbsp butter (optional)
Instructions
- Cook the bacon in a Dutch oven until crispy. Remove and set aside.
- Sauté the onion, garlic, celery, carrots, and mushrooms in the bacon grease.
- Brown the ground beef in the same pot. Drain excess grease.
- Add beef broth, Worcestershire sauce, and Dijon mustard. Simmer for 10 minutes.
- Lower the heat and stir in heavy cream. Slowly add Swiss cheese, stirring until smooth.
- Return bacon to the pot, stir well, and adjust seasoning.
- Serve hot, garnished with extra cheese and fresh parsley.
Notes
- Use freshly grated Swiss cheese for a smooth, creamy texture.
- For a thicker soup, mix 1 tbsp cornstarch with 2 tbsp water and stir in before adding cheese.
- To make it keto-friendly, skip the carrots and use a cornstarch slurry instead of flour.
- This soup tastes even better the next day, so make extra for leftovers!
