  • 3 cups shredded green cabbage
  • 1 cup shredded carrot
  • 1 red bell pepper (sliced)
  • ½ cup shelled edamame
  • 3 tbsp natural creamy peanut butter
  • ¼ cup low sodium soy sauce or tamari
  • 1 tbsp minced garlic
  • 1 ½ tbsp brown sugar
  • 1 tbsp tahini
  • 1 tbsp toasted sesame oil
  • 1 tbsp rice vinegar
  • 2 tsp fresh grated ginger
  • 1 tbsp sriracha
  • 1 tbsp sesame seeds
  • ½ cup diced green onion
  • ½ cup chopped cilantro
  • ¼ cup chopped peanuts

Instructions

  1. Cut chicken into small cubes and marinate with soy sauce, garlic, brown sugar, tahini, sesame oil, rice vinegar, ginger, sriracha, and sesame seeds.
  2. In another bowl, whisk together peanut butter, rice vinegar, honey, soy sauce, ginger, garlic, sriracha, and warm water to create the dressing.
  3. Prepare the veggies by shredding cabbage and slicing the bell pepper.
  4. Cook marinated chicken in a skillet until browned and cooked through.
  5. Toss the cooked chicken with vegetables and add desired dressing before serving.
