  • 8 cups peeled and diced Granny Smith apples
  • 2 cups organic apple juice
  • 1 small lemon (zest and juice)
  • 3 cups white granulated sugar
  • 3 tbsp pectin
  • 1 tbsp apple cider vinegar
  • pinch of salt
  • 1.5 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/2 tsp ground cardamom
  • 1/4 tsp ground cloves
  • 1/4 tsp ground nutmeg

Instructions

  1. Prepare your ingredients and tools.
  2. In a large pot, combine diced apples, apple juice, lemon zest and juice, apple cider vinegar, and salt. Bring to a boil.
  3. Reduce heat and simmer until apples are tender (10-12 minutes).
  4. Stir in spices and sprinkle pectin while mixing continuously.
  5. Return to high heat; add sugar once boiling hard. Boil for 1 minute while stirring.
  6. Ladle into sterilized jars for refrigeration or proceed with water bath canning.
